Peas and Potato Salad

If you serve me mashed potatoes and peas, I’m going to mix them together. Here is a potato salad that does just that and uses all those fresh peas and dill you might have in your garden right now.

I originally used mint the first time I made a potato and pea salad instead of dill, which was very good, but with the addition of lemon juice, I liked it with dill. Alternately, you could omit the juice and replace it with an equal amount of mayo and use the mint instead.

Salad:

  • 8-10 smallish potatoes, quartered, boiled and cooled
  • ½ cup fresh peas, cooked and cooled
  • 1/3 cup fresh dill, chopped
  • ¼ cup shallots, diced

Dressing:

  • 1/2 cup Greek yogurt
  • ¼ cup olive oil
  • 2 tbls. lemon juice
  • Salt and pepper to taste

In a small bowl whisk together the yogurt, oil and lemon juice. Add the potatoes, peas, dill and shallots to a large bowl and lightly toss together with the dressing. Pour onto a large serving plate and season with salt and pepper.
